The chef’s table defies the notion of fine dining, inviting guests to kick off their shoes and feel at home. Designed for an intimate group of six, the experience showcases chef Inoue’s blend of Japanese and Italian flavors and respect for fresh, local, sustainable ingredients. Seasons of Flavors: At the House, diners are taken on a culinary journey through Japan’s 72 micro-seasons with dishes crafted from the finest, freshest local ingredients.
Meet the ChefChef Inoue grew up watching his grandfather run a high-end wagyu retailer and his father a steakhouse. And after working in some of Europe’s finest restaurant kitchens, he developed a modern cooking style that holds strong to his family values. For chef Inoue, eating is about more than pleasing the eyes and palate, it should also be good for you and good for nature. He follows the local tradition of zero-waste cooking and finds inspiration for his evolving menu from the “together, strive for better” attitude that has held true in Kyoto for centuries.
An Eye for Detail and Sustainability
Every ingredient served at the House is handpicked by the chef himself. Aside from seeking fresh, seasonal items, chef Inoue looks into how produce is grown and harvested, how livestock is treated and the health of the soil itself. He also takes a zero-waste approach, whether it’s using yeast from overly harvested vegetables to bake bread or unsold fish from the market to create an amazing dish. On any given day, the chef’s table may feature Kyoto’s kyo-yasai heirloom vegetables, fish from Japan’s skilled shinkeijime masters, local dairy, ethically raised wagyu and imported Italian truffles and porcini.

Four Distinct Cuisines of MizukiKaiseki
Originating in Kyoto, kaiseki is considered to be the ultimate expression of Japanese cuisine. At Mizuki, kaiseki is based on the Japanese tradition of Go-mi, Go-syoku, and Go-ho (five flavors, five colors, five cooking methods). Exquisitely prepared small dishes are presented on tableware designed by contemporary artists.
Sushi
Served on an 11-meter counter table surfaced in Wajima lacquer, our elegant sushi courses are prepared Edo-style by our resident sushi master. Experience the art of sushi at its most refined.
Tempura
Seated at a massive granite counter, diners are served tempura Kappo-style, in which the chef prepares the food directly in front of his guests. Our skilled tempura chefs focus on the freshest local and seasonal ingredients.
Teppan
The Ritz-Carlton, Kyoto invites guests to experience exquisite private dining at Teppan Mizuki. Our restaurant chefs prepare fresh, flavorful steaks and seafood in an intimate, open kitchen environment, using a traditional iron griddle. Teppan Mizuki can be reserved for private gatherings of up to eight people.
La LocandaA Classic Italian Restaurant With a Contemporary Kyoto Twist
A masterful blend of Japanese and Italian traditions, La Locanda’s dual heritage is reflected both in the space and on the plate. Wood-paneling, tatami mats, and sliding doors of delicate rice paper create an elegant setting for Italian dishes made from locally sourced ingredients.

This wood-panelled dining room was once the townhouse of Denzaburo Fujita, founder of the Fujita industrial group. Constructed in 1908, this elegant room has been painstakingly restored and repurposed as a unique dining space, where private groups can enjoy Italian cuisine in a traditional Japanese setting. The astonishing view of Japanese karesansui garden with a lantern can be enjoyed from this private dining room.
Ebisugawa-tei Chidori-no-ma:
Maximum 6 people
Savor our Italian course meal while enjoying the ambiance like a little time warp back to the ancient Kyoto. Chidori-no-ma has square tables that can take up to 6 people. Dine in the impeccably-designed Ebisugawa-tei Chidori-no-ma – a classic modernist take on a traditional tatami mat dining space, with low wooden chairs, sliding paper screens and bold glass lighting.
